These are delicious gluten and sugar free cookies that will remind you of those elementary days with soft and gooey cookies and milk. And since I coach people to stay away from diary products, pair it with a glass of plant- based milk to keep it healthy and satisfying.
There are so many great options for baking today that take the guess work out of how to go gluten free, sugar free and dairy free with your baking. Many brands offer 1:1 flours that are not wheat based and make it super easy to complete. Finding alternatives to white processed cane sugar, which is not good for you, are easy now too. Products like granulated coconut sugar, Monkfruit or Stevia are simple swaps that will reduce the overall glycemic response in your body and still allow you to eat a delicious chocolate chip cookie. Check out different brands and add dairy free chocolate chips to your recipe and you literally have a guilt free cookie with healthy fats and none of the guilt.

Soft & Fluffy Chocolate Chip Cookies
3 ½ cups of Almond Flour
1 cup granulated Monkfruit or Stevia (can also use coconut sugar)
½ cup Grass Fed Butter melted
3 tbsp Organic Coconut oil melted
1 tsp vanilla
1 tsp Baking Soda
½ tsp Himalayan Pink Salt
1 cup "enjoy life" dairy free dark chocolate chips or "lily's sugar free chocolate chips
Preheat oven to 350 degrees.
In a mixing bowl add eggs, sugar, vanilla, melted butter and melted coconut oil, mix by hand or use a whisk.
Add flour, soda and salt and mix thoroughly.
Add chocolate chips.
Drop and slightly flatten cookie dough onto ungreased non-stick cookie sheet.
Bake for 9-10 minutes
Let cool on the pan before removing. Makes 2-3 dozen cookies depending on size.
